In my pursuit to honor my temple through proper nourishment, I’ve found a rhythm that works well for me; a green smoothie for breakfast, a raw lunch and a low-fat, well-balanced dinner.  I have a few staples that are in regular rotation for my lunch and this is one of them.  I make a big bowl of this salad on Monday morning and I eat it for several days.  Add the protein of your choice.  I usually add tempeh or sliced almonds.

Red Cabbage Salad w/ Spicy Peanut Dressing

1 medium head red cabbage thinly sliced

1 red pepper thinly sliced

1 cup green beans lightly blanched, cut in pieces

3 sprigs scallions sliced

1 tbsp sesame seeds

½ cup water

¼ cup soy sauce

1 tbsp honey or maple syrup

3 tsp sesame oil

3 tbsp natural peanut butter

1 in piece of ginger peeled

2 large cloves fresh garlic peeled

1 tsp crushed red pepper flake

Toss together red cabbage, red pepper, green beans, scallion and sesame seeds. Gather the remaining ingredients, place in high-speed blender and blend until smooth.

 

In fact, this dressing is multi-purpose.  Add a little more sesame oil and use it to make sesame noodles.  Minus the peanut butter, add another clove or two of garlic and 1 tbsp corn starch and use it to make broccoli in garlic sauce (recipe here).

  5. Tyra, I finally got around to making this salad! I’m super excited about it, but have a few questions. Do I use the entire head of cabbage? Half a head already fills my huge glass mixing bowl. Also, can I put the dressing on the salad now kinda like the salad is marinating in it or do I have to use it in single servings (like with normal dressing)? Oh yeah, and in grocery shopping for the ingredients I realized this is not a cheap salad to make for the first time 😉 as sesame seeds and sesame oil are rather pricey, so since I bought coconut oil for our hair I just used that instead and went w/o seeds. Dressing came out tasty. Can’t wait to try it on the salad. Thanks again!
